- 1 2 long fresh red chillies thinly sliced

- preheat the oven to 230 u00b0 c 210c fan forced heat 1 tablespoon of the oil in a large non stick frying pan over medium heat add the onion season and cook stirring occasionally for 15 minutes or until caramelised
- during this time the oregano the garlic and the remaining oil in a small bowl mix place the pizza bases on 2 large baking sheets spread the pizza bases with the oregano mixture to cover
- top the pizza bases with the onion mixture mozzarella tomato mackerel olives and chilli cook for 20 minutes or until golden brown and crispy sprinkle with rocket leaves and serve with lemon wedges
