- 1 green shallot ends trimmed finely chopped
- 2 tablespoons reduced fat mayonnaise
- salt freshly ground black pepper
- 4 slices wholegrain bread
- 4 slices light jarlsberg cheese
- 20g baby spinach leaves
- 10g butter at room temperature

- preheat oven to 180u00b0c line a baking tray with non stick baking paper combine the salmon green shallot and mayonnaise in a bowl taste and season with salt and pepper
- place 2 slices of bread on a clean work surface top with 1 slice of cheese spinach leaves salmon mixture and remaining cheese slices top with remaining bread and press down gently
