  • 1 x 210g can red salmon drained skin and bones removed flaked
  • 1 green shallot ends trimmed finely chopped
  • 2 tablespoons reduced fat mayonnaise
  • salt freshly ground black pepper
  • 4 slices wholegrain bread
  • 4 slices light jarlsberg cheese
  • 20g baby spinach leaves
  • 10g butter at room temperature

  • preheat oven to 180u00b0c line a baking tray with non stick baking paper combine the salmon green shallot and mayonnaise in a bowl taste and season with salt and pepper
  • place 2 slices of bread on a clean work surface top with 1 slice of cheese spinach leaves salmon mixture and remaining cheese slices top with remaining bread and press down gently
  • spread outside of sandwiches with butter heat a non stick frying pan over medium heat add the sandwiches and cook for 2 minutes each side or until golden transfer to prepared tray bake in preheated oven for 5 minutes or until cheese melts cut toasted sandwiches in half and serve immediately
