- 1 cup caster sugar
- 2 3 cup almond meal
- 1 2 cup milk
- 2 eggs lightly beaten
- 1 tablespoon finely grated mandarin rind
- 1 2 cup mandarin juice
- 125g butter melted
- 2 large mandarins peeled sliced thickly
- 300ml thickened cream whipped to serve
- 1 3 cup honey
- 1 2 cup mandarin juice

- preheat oven to 180c 160c fan forced grease a 6cm deep 20cm round cake pan line base and sides with 2 layers of baking paper
- place flour sugar almond meal milk eggs rind juice and butter in a large bowl whisk until combined pour mixture into prepared pan bake for 1 hour or until a skewer inserted into centre of cake comes out clean
- meanwhile make honey syrup combine honey juice and 1 4 cup water in a small saucepan over medium high heat bring to the boil reduce heat to low simmer for 5 minutes remove from heat using a skewer pierce cake 6 times pour 1 2 the syrup over hot cake in pan stand for 30 minutes turn top side up onto a serving plate drizzle with remaining syrup and top with mandarin slices serve warm with cream
